To unlock them, one must treat the beans in a complex process where details can make a big difference in how well you develop the flavour notes. The key steps are fermentation and roasting. Each variety will have its own treasure. There are countless flavours yet to be discovered and variations on fruitiness to be appreciated. Nutty, spicy, grassy notes, and more, all remain to be found in the cacao fruit. Unfortunately, because historically cacao has not been planted for variety, these flavours have been lost in the industrialised approach to cacao and chocolate. By practicing monovarietal cultivation, Xoco have adapted the fermentation to each of their varieties to develop the best profile aromatic of the cocoa beans. Monovarietal cultivation allows Xoxo to follow a low roast which allows the cocoa to express its aromas. As the result, the couvertures are intense, complex, and naturally pure with no added vanilla.
