Powdered anchovies bones, Escata Espina will intensify your gastronomic creations with unique nuances of flavor. A natutal flavouring, versatile and organoleptically unique. ESCATA ESPINA is made from anchovy (Engraulis encrasicolus) spines by a controlled baking process. The fishbones are obtained after the anchovy curing process by separating the anchovy fillet. They are them treated with a temperature stabilization process (>100ºC) which toasts them and grinded. Escata Espina combines the intense anchovy flavour with a subtle toasted aroma and a provocative, crunchy texture. It is high in calcium and phosphorus, naturally present in the anchovy bone, and is lactose-free.
