Arcoiris Pepper Blend

The pepper is harvested at four different levels of maturity - green when the corn is not yet formed, noir when the corn is formed, orange just before maturity and red at full maturity. For these four steps, the pepper is washed within an hour of harvesting and then immediately freeze-dried. White pepper (i.e. red pepper with its pericarp and pulp removed) is also freeze-dried and added to the mixture.   The result is wonderful! It has an incredible aromatic richness. Depending on the peppercorns, there are notes of currants, red fruits, tobacco, cocoa, hay, bread crusts, citrus fruits (mandarin, orange peel, citron, candied citron), hints of eucalyptus and menthol, notes reminiscent of pine sap or turpentine, milky accents reminiscent of yoghurt, and warm notes of angelica. Our perfect pairings: Seafood: oysters, scallops, cuttlefish, mackerel, sardines, sea bass, sea bream, bluefin tuna, shrimp or langoustine tartars, grilled abalone, salmon, anchovies, herring. River fish: eel, perch, pike-perch, fried bleak. Meat: grilled beef and pork, lamb, game, red offal (heart, kidney, liver). Deli meats: sausage, coppa, bacon, lardo di Colonnata, smoked bacon, bellota ham, wagyu ham, tender cecina. Cheeses: goats, sheep, camembert or baked reblochon. Vegetables: cucumber, courgette, carrot, cabbage, asparagus, chickpeas, lentils, cultivated and wild mushrooms, white beans, cabbage, potatoes. Fruits: pear, mango, orange, strawberry, cherry, pineapple, banana, white peach, tangy apples. Others: gooey chocolate cakes, chocolate mousse.
